The short answer
The 2026 MICHELIN Guide makes Madrid the most-starred city in Spain: one restaurant with three stars, six with two and twenty-four with one. The hardest tables to get are the three-star DiverXO and the two-star rooms below; book them before you book anything else.

How to actually get the table
Most of these restaurants release dates on their own booking systems weeks or months ahead and fill within hours, especially Friday and Saturday dinner. Lunch is easier than dinner almost everywhere. Give us your dates and two or three names in order of preference; we work the releases, the waiting lists and the alternatives, and confirm in writing.
